Ingredients
- 1tbsp olive oil
- 1 medium brown onion
- 1 clove garlic
- 1 can chopped tomatoes
- 1 can pinto beans
- Bag of corn chips
- 1 ½ cups of grated cheddar cheese
- ½ cup sour cream
- ¼ cup sweet chili
- Guacamole {if wanted}
- 1/3 cup chopped red onion
- Salt and pepper
Method
- Preheat oven to 200 degrees
- Put oil in frying pan cook and sweat onion and garlic for 5 mins or until onion softens. Stir in undrained tomatoes and beans.
- Spread corn chips over a baking dish, sprinkle cheese overtops and bake for fifteen mins until cheese is melted.
- Bring mixture to a boil, reduce heat, simmer, stir constantly until mixture thickens slightly. Season with salt and pepper.
- Serve nachos topped with sweet chili, red onion, sour cream and guacamole if wanted.
