Roasted Sweet Potato Sushi

For the Batter

  • 1 large sweet potato  
  • 2tbs of hot sauce  
  • 1 cup of flour  
  • ½ cup milk  
  • Enough breadcrumbs to coat the potato  
  • Enough oil to cover the potato sticks 
  • For the rice (see video) 

For the Filling

  • ¾ cucumber cut into strips 
  • 1 whole avocado  
  • Kewpie mayonnaise enough to taste  
  • Sesame seeds to sprinkle  
  • For the Rolling (see video) 
  • 6 sheets of nori sushi  


  1. First cook your rice (see video) 
  2. Second slice your sweet potato thin 
  3. Mix all wet ingredients and coat the sweet potato  
  4. Fry the sweet potato in oil until batter goes golden brown  
  5. Allow to cool while you prep your vegetables  
  6. Add your cooled rice to a nori sheet and add all the fillings  including the sesame seeds and kewpie  
  7. Roll your sushi roll (see video)   
  8. Slice with a wet knife for cutting ease and serve with soy sauce, wasabi and pickled ginger.
