For the Batter
- 1 large sweet potato
- 2tbs of hot sauce
- 1 cup of flour
- ½ cup milk
- Enough breadcrumbs to coat the potato
- Enough oil to cover the potato sticks
- For the rice (see video)
For the Filling
- ¾ cucumber cut into strips
- 1 whole avocado
- Kewpie mayonnaise enough to taste
- Sesame seeds to sprinkle
- For the Rolling (see video)
- 6 sheets of nori sushi
Method
- First cook your rice (see video)
- Second slice your sweet potato thin
- Mix all wet ingredients and coat the sweet potato
- Fry the sweet potato in oil until batter goes golden brown
- Allow to cool while you prep your vegetables
- Add your cooled rice to a nori sheet and add all the fillings including the sesame seeds and kewpie
- Roll your sushi roll (see video)
- Slice with a wet knife for cutting ease and serve with soy sauce, wasabi and pickled ginger.
