Ingredients
- 2 Tbsp of vegetable oil
- 2 garlic cloves, minced
- 4 cups cooked rice
- 3 eggs, beaten
- 4 Tbsp soy sauce
- 1 Tbsp fish sauce
- 2 Tbsp oyster sauce
- 2 tsp sesame oil
- 2 carrots diced
- 250g Fresh Spinach
- 1 capsicum diced
- ½ cauliflower head blended or chopped till fine.
- 15g butter
- Finely sliced spring onion
Method
- Bring in a large pan turn it up to high, heat with the oil. Once heated, add the already cooked rice and garlic, then stir fry for 5 minutes.
- Push the rice to the side of the pan and then pour the eggs into the other. Stir to scramble, then stir the egg through the rice.
- Pour the soy sauce, oyster sauce, fish sauce and sesame oil into the rice. Stir and combine, then fold through the chopped vegetables and spinach, cook for 3-4 minutes or until cooked through.
- Add the butter and stir until melted, then serve immediately. Garnish with sliced spring onion if you want.
